Roasted Vegetable Salad with Tahini Dressing Recipe

Before I tell you all about this recipe, let me introduce myself! My name is Holly and I run a Vegan Food Blog called Stunningly Plant-Based. I was born and raised here in Ottawa, and I have been vegan for the last 10 years. My goal is to showcase the simplicity of living a plant-based lifestyle that is easy and attainable for anyone! I have always been passionate about health, so a year ago I decided to work toward becoming a Registered Nutritionist. I want to provide even more valuable information to my readers about the health benefits of plant-based eating. This Vegan Roasted Vegetable Salad with Tahini Dressing is packed with flavour and nutrition! Perfect for a potluck, or a summer side dish.

Summer is officially here! Bring on the warm days, picnics, and time spent with family and friends. Today I am showing you how to make a salad perfect for this time of year. This Vegan Roasted Vegetable Salad with Tahini Dressing is full of colourful veggies, satisfying crunch, and a deliciously creamy dressing. 

What’s great about this recipe is that it is completely customizable. If you don’t have the ingredients listed below, try some of these alternatives:

  • Want to use up the leftover veggies in your fridge? Roast them up and toss them with your go-to crunchy greens. 
  • Millet gives this salad a little extra bulk and texture. If you don’t have millet, good alternatives can be quinoa or couscous. 
  • Sprinkled on top are crunchy roasted chickpeas, these can be subbed out and replaced with various seeds such as roasted sunflower seeds. 
  • The tahini dressing can be made sweeter by adding more agave or maple syrup.

I can’t forget to mention that this delicious bowl is a nutrition powerhouse. It contains loads of fibre, various vitamins and minerals, protein, some iron, and antioxidants. 

How to Make this Vegan Roasted Vegetable Salad with Tahini Dressing:

Roasted Chickpeas Ingredients:

  • 1 can of Chickpeas
  • 1 tsp Olive Oil
  • ½ tsp Paprika
  • ½ tsp Garlic Powder
  • Salt and Pepper to taste

Salad Ingredients:

  • 1 bunch of Kale
  • 1 large Sweet Potato
  • 1-2 Beets
  • 1 Green or Yellow Zucchini
  • 1 cup of Millet

Tahini Dressing Ingredients:

  • ¼ cup Tahini
  • 1-2 tbsp Agave or Maple Syrup
  • Juice of half a Lemon
  • 3 tbsp of Water

Directions:

  • Preheat oven to 425 Degrees Fahrenheit. 
  • Drain and rinse the chickpeas, and toss in a bowl with oil, garlic, paprika, salt, and pepper until they are well coated. Distribute onto a baking sheet lined with parchment paper and set aside. 
  • Prepare the vegetables by slicing them into thin discs and then again into halves. The beets should be the thinnest as they take the longest to cook. Aim for ½ cm or less. 
  • Distribute the vegetables onto a separate baking sheet lined with parchment paper.
  • Place both the vegetables and the chickpeas in the oven side by side on the middle rack. Remove the chickpeas after 15 minutes and the vegetables after 20-25 minutes or until tender. 
  • As the vegetables and chickpeas are cooking prepare the millet according to package instructions. Set aside and let cool.
  • Remove the vegetables from the oven and let cool. Adding the vegetables to the salad when they are too hot will soften the kale. 
  • Prepare the dressing by whisking together the tahini, agave, lemon juice, and water.
  • Finally, assemble all the ingredients in a large salad bowl, leaving the roasted chickpeas until last to retain their crunch.

Tip: Massaging the kale for 3 minutes with some olive oil, a squeeze of lemon juice, and a pinch of salt will enhance the flavour and reduce bitterness.

Ask a Plant-Based Naturopathic Doctor (ND): Meet Dr. Marianne Trevorrow

This blog is to introduce myself, Dr. Marianne Trevorrow (ND), to the VegOttawa Association community.  I’ll be doing a regular “Ask a Plant-Based ND” column twice a month for VegOttawa.  I’ll be answering questions from members and social media followers about what is credible in nutritional science to help people of all ages make healthy choices that are accessible and sustainable. 

I’m a plant-based naturopathic doctor (ND) practicing in Ottawa and a former assistant research investigator in nutritional medicine at Bastyr University in Seattle, where I completed my training in 2006. I’m also new to Ottawa, having recently moved here from Calgary to run the Canadian ND Association professional journal (CANDJ) as Editor-in-Chief. As someone who believes very strongly in the sustainability principles of the recent EAT-Lancet report, I try to support more discussions about how plant-based, culturally appropriate diets fit into natural medicine practice and enjoy these conversations with my patients. 

Personally, I’ve eaten a primarily-plant based diet for over 20 years, and I have been vegan for 3 1/2 years.  I’m also soy and histamine sensitive, which has made being vegan a bit more of a challenge. Many ‘standard’ meat substitutes, such as Impossible burgers and many ‘chick’n’ substitutes, are simply off the table for me. If there’s a silver lining to this, it means that beans, nuts and seeds have become my primary choice of vegan protein. As someone who had long long-term digestive problems, this took me a few months to accomplish. I found I had to very gradually increase my legume intake and sometimes use protein powders to fill in the gaps. When eating out, I used those same principles and looked for bean-based dishes with fruits, vegetables and grains as main menu items. I made sure to mention to staff that I’m sensitive to soy, if the ‘vegetarian’ option doesn’t clearly state what it’s made from.  Interestingly, over the past five years I’ve found that vegan or plant-based options for eating out and at regular grocery stores are becoming easier to find. The food is also often interesting, unique and delicious. 

I went vegan for ethical and health reasons. As a bonus, sticking out a bit of a bumpy transition to legumes was also worth it for my overall health.  My IBS and asthma are pretty much gone, and many other nagging health problems (including upper back pain from sitting too long at desks) have significantly improved. Far from being depleted or deficient, I feel a lot better than I did before making the switch, although I’m also careful to make sure I supplement with Vitamin D, B12 and plant-based omega 3s. 

Many of us have stories about how we found our way to plant-based eating. Once there, it can be a challenge to stay there. Many of us have family and friends (or health professionals) who think eating vegan is odd and strange, if not actually dangerous.  This attitude is slowly changing, but we are hoping in this blog series to support our readers at whatever stage they are at in their vegan journey to go vegan in a way that can be accessible for everyone.

VegOttawa Seeking New Board Members!

VegOttawa is committed to raising awareness and providing resources for vegans and transitioning vegans throughout their journey to improving personal health, protecting the environment and ending animal exploitation. However, we can only do this with the help of volunteers. As a non-profit we are operated entirely by a team of dedicated board members, advisors and volunteers who generously donate their time to our organization. VegOttawa Association is looking to find a Vice President & Treasurer for our board!


As a volunteer board member you will gain valuable experience, meet like-minded people, and support VegOttawa’s work to promote plant-based lifestyles in the Ottawa area! This is a great opportunity for Ottawa residents who are passionate about growing veganism in the nation’s capital. No experience is necessary and, although Board Members are expected to be dependable and have enough time to contribute, the specific time commitment can vary depending on your own availability. On average our board volunteers between 2-5 hours per week.

The ideal candidates should:

  • be able to commit to a one-year term as director
  • be living a vegan or vegetarian lifestyle
  • be able to volunteer approx. 2-5 hours per week
  • be able to attend the majority of the VegOttawa’s monthly meetings with other Board Members (time mutually decided on by all board members) and respond to e-mails in a timely manner

Vice-President Role Description:

  • monitor email and reply to inquiries in a prompt manner;
  • acts as the President in his or her absence;
  • is responsible for coordination of the Volunteer Committee including overseeing the social media team (including reviewing strategy, goals & content calendar);
  • and assists president in creating strategic development campaigns.

Treasurer Role Description:

  • monitor treasurer email and reply to inquiries in a prompt manner;
  • oversees the finances and budget of the Association;
  • keeps full and accurate accounting records of all receipts and disbursements;
  • under the direction of the Board, controls the deposit of money, the safekeeping of securities and the disbursement of the funds of the Association; 
  • renders to the Board an account of all transactions and of the financial position of the Association upon request by the Board; 
  • prepares or ensures that the Annual Financial Statement is prepared in accordance with applicable laws; and
  • liaises with an Auditor if required.
